The joys of a nearly empty porridge jar...
I was working from home this morning- the highlight of this being a leisurely breakfast in bed- and to my DELIGHT I noticed my Meriden coconut peanut butter was nearly finished....
Out of peanut butter- surely this is not something to celebrate? But oh yes it is because it means it is PORRIDGE IN A JAR TIME! Even at the rate I go through peanut butter, this opportunity is not a common one so when it comes around, I tend to get excited.
Porridge is my favourite breakfast (/any time of day) food- it is so versatile with various toppings, flavourings and formats! On top of this, it scores highly on the nutrition front. It contains a soluble fibre called beta-glucan which forms a sort of gel in your stomach which not only traps cholesterol (helping to keep your levels of bad cholesterol down) but also means your stomach takes longer to empty allowing the mid morning munchies to stay at bay. I won't even get started on the greatness of peanut butter now- I will save that for another post!
There are many ways to enjoy porridge oats- both hot and cold- which I will share with you in future posts however I thought I would start today with my favourite way of all time.
Simple steps to breakfast greatness:
1. Cook porridge (I used 30g oats and 200ml coconut & almond milk but any milk will do, I just love this flavour!)
2. Tip into peanut butter jar that is nearly empty (not gonna lie, sometimes it is a stretch to say it is 'nearly empty' when i do this- the more peanut butter the better!)
3. Top with anything you like- i picked banana and cinnamon
4. Enjoy the heaven that is scraping the sides of the jar with a spoon of hot porridge- melted porridgy goodness!
Then immediately start on another jar of peanut butter so you can repeat this again in not too distant future! (I have been known to ask to take home a friend's nearly empty jar that she was about to throw out...)
